Ingredients:
2 cups peeled, chopped plantain cubes (peel and cut the plantain into small 1 inch cubes and immediately soak it in a bowl of water)
8 teaspoons oil (any kind)
A pinch of turmeric powder
1 teaspoon salt
2 teaspoons chili powder
Method:
Heat the oil.Add the vegetable (make sure to drain it in a colander before adding), turmeric powder, salt and mix well.Add 1/2 cup water and cover and cook stirring frequently till the vegetable is cooked. The vegetable should break apart easily and become soft like you would with potatoes when done cooking. More water could be added if the water is done and the vegetable still needs to cook for some more time. Lastly add the chili powder and mix well and cook another 2 to 3 min uncovered till all the water is evaporated and the vegetable looks dry. Remove from heat and serve hot or cold with plain, white or brown cooked rice along with a tablespoon of clarified butter per serving.
