Ingredients;
4 Medium Potato -- Cubed
1/2 Teaspoon Ginger
2 Tablespoons Olive Oil
1/4 Teaspoon Fenugreek Seed
1/4 Teaspoon Kalonji Seeds -- Onion Seeds
1/4 Teaspoon Fennel Seed
1/4 Teaspoon Cumin Seed
1/4 Teaspoon Black Mustard Seed
4 Medium Green Tomato -- Chopped
Salt -- To Taste
1/2 Teaspoon Turmeric
1/2 Cup Water
2 Tablespoons Sugar
Method;
Saute fenugreek, kalonji, fennel, cumin and mustard seeds in oil for 1 minute. Add ginger, potatoes, tomatoes, salt, turmeric and water. Cover and simmer for 20 minutes. Add sugar and simmer for 5 minutes. Serve over rice.
