Ingredients:
4 Capsicums
1 cup Cottage Cheese (cubed)
1 cup Onion (chopped)
1 tsp Cumin Powder
4 tbsp Mint Leaves (chopped)
1 tbsp Green Coriander (chopped)
1/2 cup Lemon Juice or per your taste
1/2 tsp Salt
1/4 Red Chili Powder
1 tsp Olive Oil
Method;
Cut out the top portion and remove the seeds from the capsicums.In a bowl, add cottage cheese, onions, mint leaves, coriander leaves, cumin powder, lemon juice, salt, red chili powder and mix well.Add olive oil and mix well.Stuff the capsicums with the cottage cheese mixture. Cut aluminum foil into squares and cover the capsicum top with it.Bake in preheated oven at 200 degree C for 5 minutes. You can also barbecue it.
