Ingredients;
1/2 cup semolina,
1/2 cup sugar,
1/2 cup coconut powder,
1tbsp baking powder,
500gms carrot grated,
2bsp ghee,
2tbsp yoghurt,
2tbspoil,
2-3tbsp sugar,
2tbsp milk powder,
grated coconut for garnishing,
sugar syrup(optional).
Method;
Mix semolina,sugar,coconut and baking powder together.Add yoghurt,milk powder and oil to the mixture and keep aside.Heat ghee in a deep pan and fry carrot until coked.Add 2-3 tbsp sugar,mix well and remove from the pan.Add carrots to the semolina mixture.Mix well, pour into a deep-bottomed dish and bake in a preheated oven for 20min at 180c.Remove from oven and cut into squares and garnish with grated coconut. Optional;For extra sweetness,drizzle a few tbsp of sugar syrup.
