Pumpkin bharta

Ingredients:

2 cups Pumpkin (chopped)
1/4 cup Onions (finely chopped)
1/2tsp Fennel Seeds
a pinch Fenugreek (methi)
1/2 tsp Cumin Seeds
1/4 tsp Nigella (kalonji)
a pinch asafoetida (hing)
1/4 tsp turmeric powder
1 tsp chili powder
1 1/2 tsp Dry Mango Powder
Salt & Pepper to taste
1 tbsp oil
2 tbsp chopped coriander

Method;

Heat the oil in the pan. Add the cumin seeds, asafoetida,fennel seeds, nigella seeds and fenugreek seeds.Saute the onions.Add the pumpkin, turmeric powder, chili powder and salt. Cover with the lid and let it cook till tender.Add the dry mango powder and salt. Mix well. Simmer till the oil separates from the pumpkin. Serve hot, garnished with coriander.
