Carrot kheer

Ingredients;

Milk - 1 litre
Sugar - 250 gm
Carrot - 1
Almonds - 10
Cashews - 10
Pista - 10
Cardamom - 1
Saffron - a few strands

Method;

Soak almond, pista in hot water, remove skin and grind to a paste with cashew and milk. Soak saffron in milk. Powder cardamom. Peel skin of carrot and grind to a paste Boil milk in a thick bottomed vessel.When the milk starts boiling, add ground carrot, almond paste, cardamom and saffron.Stir the contents and when they thicken, add sugar and stir well.Remove the vessel from the stove after a few minutes and serve cold.
