Ingredients;
karela – 4
onion – 1 big
green chillies – 2
tamarind – lemon size
garlic cloves – 6
jaggery – 3 tbsp
oil – 2 tsp
red chillie – 1
mustard – 1/4 tsp
cumin – 1/2 tsp
urad dal – 1/4 tsp
methi seeds – 1/4 tsp
turmeric – 1/4 tsp
curry leaves – 1 sprig
cilantro – 4 sprigs
Method:
Wash the karela and dice them into small pieces. Soak tamarind in slightly warm water. Heat oil in a pan, add red chillie, mustard, urad dal, cumin, methi seeds, garlic cloves, turmeric, curry leaves and let them splutter. Add thinly sliced onions, slit green ghillies and saute them.Add the finely sliced karela and let them cook until soft. Squeeze the soaked tamarind and cook it until it boils. Add salt, chilli powder and cook it for 10 – 12 mins. Add grated jaggery and cook for 2 mins. Garnish with cilantro and turn off the flame. Add more jaggery, if u think it is bitter. If u don’t like bitter, remove all the seeds and boil the diced karela in tamarind, turmeric and water, then u can add the boiled pieces onto onions mixture and repeat the above process.
