Masala baingan(brinjal)

Ingredients;

Brinjals – 7-8 small
Coriander leaves – 1 tbsp (chopped)
Onion – 1 (chopped)
Tomato – 1 (chopped)
Peanut powder – 1 tbsp
 Tomato puree – 2 tsp
Ginger paste – 1 tsp
 Black cumin seeds – 1 tsp
Red chilly powder – 1/2 tsp
Green chilies – 2 (chopped)
Turmeric powder – 1/2 tsp
Salt – as per your taste

Method;

Firstly we will slit the brinjals. Remove the stalk of brinjals, slit them from top into four equal halves, and keep join from the bottom. Now we will masala. Take a plate or bowl; add peanut powder, pinch of turmeric powder, salt, coriander powder and red chilly powder. Pour 2 tsp of water in the mixture to bind them properly. Now stuff the brinjal with this mixture properly. Prepare all brinjals like wise. Take a pan; put 1 tbsp of oil for preparing another masala. Add black cumin seeds, chopped chilies, ginger paste, and chopped onion. Saute them till they become little brown. After onions become little brown, add chopped tomatoes, some salt, pinch of turmeric powder and red chilly powder. When masala is ready add the stuffed brinjals in the masala. Pour tomato puree on the brinjals. Add sufficient water in the pan to cook the brinjals nicely. Do not add much water as we don’t want gravy in this recipe. Cover it and cook for 8- 9 minutes on medium flame. Brinjals have become soft. Take them out in a bowl. Garnish with coriander leaves. masala brinjals are ready. Serve hot with roti or naan or parantha.
